Ingredients:

  • Vegetables:
    • 1 yellow zucchini (courgette), sliced
    • 1 green zucchini (courgette), sliced
    • 1 red bell pepper, sliced
    • 200g mushrooms (champignons), sliced
    • 2-3 cloves fresh garlic, minced
  • Cheese and Toppings:
    • 100g vegan white cheese, crumbled
    • 2-3 tbsp cashew sour cream (plant-based)
    • 50g smoked vegan cheese, grated
  • Herbs and Seasoning:
    • Fresh oregano, chopped
    • Fresh basil, chopped
    • Fresh marjoram, chopped
    • Pepper to taste
    • Organic olive oil

Instructions:

  1. Preheat your oven to 200°C (390°F).
  2. Prepare the Vegetables: In a large baking dish, combine the sliced yellow zucchini, green zucchini, red bell pepper, white cheese, mushrooms, and minced garlic.
  3. Season the Vegetables: Drizzle the vegetables with organic olive oil. Add the fresh oregano, basil, and marjoram. Season with pepper to taste put the cashew sour cream on top, and sprinkle with the smoked grated vegan cheese.
  4. Place the baking dish in the preheated oven and bake for about 25-30 minutes, or until the vegetables are tender and slightly golden.

Instructions:

  1. Combine all ingredients in a large pot.(or in #SmartCooker – 10 minutes)
  2. Bring to a boil, then reduce heat and simmer until vegetables are tender and flavors have melded together.
