Master Plant-Based Pastry in Just Six Weeks: New Course Launches Oct. 1st at Escoffier’s Boulder Campus

 

Registration Now Open for Escoffier’s Six-Week Plant-Based Pastry Course in Boulder, CO

The Auguste Escoffier School of Culinary Arts in Boulder, Colorado, is excited to announce a new stand-alone course, Foundations of Plant-Based Pastry 1, starting on October 1st. This six-week program is open for public registration through September 30th and is perfect for students eager to dive into the art of creating plant-based pastries and confections.

This course builds on Escoffier’s 2021 launch of its Plant-Based Culinary Arts Degree and Diploma programs, catering to the increasing demand for nutritious, plant-based cuisine and sustainable cooking practices. The new pastry course focuses on applying these principles to desserts, emphasizing the science behind ingredient interactions and how to craft plant-based versions of classic treats like cookies, pies, tarts, puddings, and more.

“We’re bringing our plant-based expertise into the world of sweet treats,” said Kirk T. Bachmann, Provost and President of Escoffier’s Boulder campus. “Students will learn essential pastry techniques while balancing flavors and textures with plant-based ingredients.”

Led by pastry arts chef and plant-based baking expert Sarah Jardine, classes will be held at the Boulder campus from October 1 through November 7, 2024, every Tuesday, Wednesday and Thursday from 6:00 p.m. to 9:30 p.m. Class sizes are limited to 10 students for a personalized learning experience. Students will receive a certificate of completion and may apply course credits toward a future degree or diploma.
