Mornings are like “we need something fresh” to our bodies after a whole night’s sleep, staying in bed and not moving enough for 6-7-8 hours.
We can start our day with light jogging, then a lean, but nutritious breakfast. From my own experience, sometimes I feel like I need a sweet breakfast, other times not really, or just eat fruit. We have here, lots of snow, so I felt today, that I need something sweet and powerful to be fresh and active all day long.
I just put on a bowl lots of ingredients, what was on my mind and in my kitchen, and made a Nutritious Muffin. In general, I have no idea what and how will be, or what I have to put as ingredients, it comes at the moment. So, I said we need in this winter and flu season, something nutritious for our immunity system, gut health, and our whole body, as our gut is our second brain and our immune system, we have to protect and feed it properly.
Muffin Ingredients:
- 100 g chickpea flour, 200 g white rice flour, a spoon of choco powder, half spoon Ganoderma powder, a spoon of gluten-free oats, 1 capsule of an enzyme-probiotics-prebiotics mixture, whole crushed peanuts, gluten-free oat milk – as the dough have to be a little bit sticky and liquid, but not too much –
- I used a pinch of vanilla, organic cinnamon, lychee fruit extract, functional mushrooms, organic green coffee bean, shiitake and maitake powder, cordyceps powder, kelp powder, marine-algae powder, salted caramel powder, chia seeds, a mixture of berries powder, MCT oil, and B12. You can add a pinch of organic, phosphate-free, gluten-free baking powder, too.
Place them in a Muffin Baking Tray, then place them in the preheated oven (180 °C).
…Bake till is ready hah! Yes, it takes about 15-20 minutes.

- a hot cup of organic reishi coffee
